Ingredients

  • 1 pound beef sirloin, thinly sliced
  • 2 tablespoons olive oil

  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 2 tablespoons all-purpose flour
  • 1 cup sour cream
  • Salt and pepper to taste
  • 12 ounces egg noodles, cooked according to package instructions

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the beef and cook until browned. Remove the beef from the skillet and set aside.
  2. Heat the remaining 1 tablespoon of olive oil in the same skillet. Add the onion and mushrooms, and cook until softened.
  3. Add the garlic to the skillet and cook for an additional minute.
  4. Sprinkle the flour over the onion and mushroom mixture, and stir to combine.
  5. Pour in the beef broth, stirring constantly until the mixture thickens.
  6. Return the beef to the skillet and simmer for 10 minutes.
  7. Stir in the sour cream and season with salt and pepper.
  8. Serve the beef stroganoff over the cooked egg noodles.
