Ingredients

  • 1 pound beef sirloin, thinly sliced
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 cup beef broth
  • 1 cup sour cream
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste
  • 12 ounces egg noodles, cooked according to package instructions

Instructions

  1. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the beef slices and cook until browned. Remove the beef from the skillet and set aside.
  2. Heat the remaining 1 tablespoon of olive oil in the same skillet. Add the chopped onion and garlic, and sauté until softened.
  3. Add the sliced mushrooms to the skillet and cook until they release their liquid and become golden brown.
  4. Sprinkle the flour over the mushroom mixture and stir to combine. Cook for 1-2 minutes to remove the raw flour taste.
  5. Pour in the beef broth and bring the mixture to a simmer. Cook until the sauce thickens slightly.
  6. Return the cooked beef to the skillet and stir in the sour cream. Season with salt and pepper to taste.
  7. Serve the beef stroganoff over the cooked egg noodles.
