Ingredients

  • Beef fat trimmings, 2 lbs

Instructions

  1. Trim the excess fat from a beef roast or ask your butcher for beef fat trimmings.
  2. Cut the fat into small pieces and place them in a heavy-bottomed pot.
  3. Heat the pot over low heat and let the fat slowly render, stirring occasionally, for about 4 hours until the fat pieces turn crispy and golden brown.
  4. Strain the liquid fat through a fine-mesh sieve into a heatproof container. Discard the crispy bits or save them for other uses.
  5. Let the beef tallow cool to room temperature, then cover and store it in the refrigerator for up to 6 months.
