Instructions
- Trim the excess fat from a beef roast or ask your butcher for beef fat trimmings.
- Cut the fat into small pieces and place them in a heavy-bottomed pot.
- Heat the pot over low heat and let the fat slowly render, stirring occasionally, for about 4 hours until the fat pieces turn crispy and golden brown.
- Strain the liquid fat through a fine-mesh sieve into a heatproof container. Discard the crispy bits or save them for other uses.
- Let the beef tallow cool to room temperature, then cover and store it in the refrigerator for up to 6 months.
