Beet Soup (ukrainian Borscht)

Ingredients

  • 4 medium beets, peeled and grated
  • 4 cups vegetable broth
  • 2 potatoes, peeled and diced
  • 1 onion, chopped
  • 2 carrots, peeled and grated
  • 2 cloves garlic, minced
  • 1/4 cabbage, shredded
  • 1 can (14 oz) diced tomatoes
  • 2 tbsp tomato paste
  • 2 tbsp olive oil
  • 2 bay leaves
  • 1/4 cup chopped fresh dill
  • Salt and pepper to taste
  • Sour cream and fresh dill for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and sauté until the onions are translucent.
  2. Add the grated beets, carrots, and potatoes to the pot. Cook for 5 minutes, stirring occasionally.
  3. Pour in the vegetable broth, diced tomatoes, and tomato paste. Add the bay leaves and season with salt and pepper. Bring the soup to a boil, then reduce the heat and simmer for 30 minutes.
  4. Add the shredded cabbage to the pot and cook for an additional 15 minutes, or until all the vegetables are tender.
  5. Stir in the fresh dill and adjust the seasoning if needed. Remove the bay leaves from the soup.
  6. Serve the beet soup hot, garnished with a dollop of sour cream and a sprinkle of fresh dill.
