Beetroot Soup (Къухумаш)
Kъухумаш (Beetroot Soup) is a traditional Chechen dish that is both nutritious and delicious. This vibrant soup is a perfect blend of earthy beetroot, savory beef, and aromatic herbs, making it a comforting and hearty meal.
Ingredients
- 500g beef, cubed
- 3 large beetroots, peeled and diced
- 1 onion, finely chopped
- 2 carrots, sliced
- 3 potatoes, peeled and cubed
- 4 cups beef broth
- 2 bay leaves
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh dill, chopped
- 2 tablespoons sour cream (optional, for serving)
Instructions
- In a large pot, brown the beef over medium heat for 5 minutes.
- Add the onion and carrots, and cook for another 5 minutes.
- Stir in the beetroots, potatoes, beef broth, bay leaves, salt, and black pepper.
- Bring the soup to a boil, then reduce the heat and simmer for 1.5 hours, or until the beef is tender.
- Stir in the fresh dill and cook for an additional 5 minutes.
- Remove the bay leaves and serve the soup hot, topped with a dollop of sour cream if desired.
