Beetroot Soup (Къухумаш)

Ingredients

  • 500g beef, cubed
  • 3 large beetroots, peeled and diced
  • 1 onion, finely chopped
  • 2 carrots, sliced
  • 3 potatoes, peeled and cubed
  • 4 cups beef broth
  • 2 bay leaves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons sour cream (optional, for serving)

Instructions

  1. In a large pot, brown the beef over medium heat for 5 minutes.
  2. Add the onion and carrots, and cook for another 5 minutes.
  3. Stir in the beetroots, potatoes, beef broth, bay leaves, salt, and black pepper.
  4. Bring the soup to a boil, then reduce the heat and simmer for 1.5 hours, or until the beef is tender.
  5. Stir in the fresh dill and cook for an additional 5 minutes.
  6. Remove the bay leaves and serve the soup hot, topped with a dollop of sour cream if desired.
