Ingredients

  • 1 pound beef sirloin, thinly sliced
  • 2 tablespoons butter
  • 1 onion, finely chopped
  • 8 ounces mushrooms, sliced
  • 1 cup beef broth
  • 1 cup sour cream
  • Salt and pepper to taste
  • 2 tablespoons all-purpose flour
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Season the beef slices with salt and pepper, then coat them in flour.
  2. In a large skillet, melt the butter over medium heat. Add the beef and cook until browned. Remove the beef from the skillet and set aside.
  3. In the same skillet, add the chopped onion and mushrooms. Cook until the vegetables are soft.
  4. Pour in the beef broth and bring to a simmer. Stir in the sour cream and Dijon mustard.
  5. Return the beef to the skillet and let it simmer for a few minutes until the sauce thickens.
  6. Adjust seasoning with salt and pepper if needed.
