Beggar's Chicken (叫花鸡)
叫花鸡 (Beggar's Chicken) is a traditional dish from Haipai Cuisine, known for its unique cooking method and flavorful taste.
Ingredients
- 4 whole chicken legs
- 200g sticky rice
- 50g shiitake mushrooms
- 50g bamboo shoots
- 50g Chinese sausage
- 4 slices ginger
- 4 cloves garlic
- 4 scallions
- 4 tbsp soy sauce
- 2 tbsp Shaoxing wine
- 2 tbsp oyster sauce
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Soak the sticky rice, shiitake mushrooms, and bamboo shoots in water for 2 hours.
- Marinate the chicken legs with soy sauce, Shaoxing wine, oyster sauce, ginger, and garlic for 1 hour.
- Stuff the marinated chicken legs with the soaked sticky rice, mushrooms, bamboo shoots, and Chinese sausage.
- Wrap each chicken leg with parchment paper and then aluminum foil.
- Bake in a preheated oven at 350°F for 2 hours.
- Unwrap the chicken legs and serve hot.
