Ingredients
- Eggplant - 2 medium, cubed
- Potatoes - 3 medium, cubed
- Onion - 1 large, finely chopped
- Tomato - 2 medium, chopped
- Ginger - 1-inch piece, grated
- Garlic - 3 cloves, minced
- Green chilies - 2, slit
- Turmeric powder - 1 teaspoon
- Coriander powder - 2 teaspoons
- Cumin powder - 1 teaspoon
- Red chili powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Salt - to taste
- Oil - 3 tablespoons
- Fresh coriander leaves - for garnish
Instructions
- Heat oil in a pan and add the chopped onions. Sauté until they turn golden brown.
- Add the grated ginger, minced garlic, and slit green chilies. Sauté for a minute.
- Add the cubed eggplant and potatoes. Mix well and cook for 5 minutes.
- Add the chopped tomatoes, turmeric powder, coriander powder, cumin powder, red chili powder, garam masala, and salt. Mix well and cook for another 10 minutes.
- Add a cup of water, cover the pan, and let the curry simmer for 10-15 minutes until the vegetables are tender.
- Garnish with fresh coriander leaves and serve hot with steamed rice or roti.
