Begun Aloo Bai (eggplant And Potato Curry)

Ingredients

  • Eggplant - 2 medium, cubed
  • Potatoes - 3 medium, cubed
  • Onion - 1 large, finely chopped
  • Tomato - 2 medium, chopped
  • Ginger - 1-inch piece, grated
  • Garlic - 3 cloves, minced
  • Green chilies - 2, slit
  • Turmeric powder - 1 teaspoon
  • Coriander powder - 2 teaspoons
  • Cumin powder - 1 teaspoon
  • Red chili powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Oil - 3 tablespoons
  • Fresh coriander leaves - for garnish

Instructions

  1. Heat oil in a pan and add the chopped onions. Sauté until they turn golden brown.
  2. Add the grated ginger, minced garlic, and slit green chilies. Sauté for a minute.
  3. Add the cubed eggplant and potatoes. Mix well and cook for 5 minutes.
  4. Add the chopped tomatoes, turmeric powder, coriander powder, cumin powder, red chili powder, garam masala, and salt. Mix well and cook for another 10 minutes.
  5. Add a cup of water, cover the pan, and let the curry simmer for 10-15 minutes until the vegetables are tender.
  6. Garnish with fresh coriander leaves and serve hot with steamed rice or roti.
