Begun Bharta (stuffed Eggplant Curry)

Ingredients

  • 2 large eggplants
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 3 green chilies, finely chopped
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic paste
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 2 tablespoons vegetable oil
  • Fresh cilantro for garnish
  • Salt to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prick the eggplants with a fork and roast them in the oven for 25-30 minutes, or until the skin is charred and the flesh is soft.
  3. Remove the eggplants from the oven and let them cool. Peel off the charred skin and mash the flesh in a bowl.
  4. Heat the vegetable oil in a pan and sauté the onions until they are translucent.
  5. Add the ginger and garlic paste, green chilies, and tomatoes. Cook until the tomatoes are soft.
  6. Add the cumin powder, coriander powder, turmeric powder, red chili powder, and salt. Mix well.
  7. Add the mashed eggplant to the pan and cook for 5-7 minutes, stirring occasionally.
  8. Garnish with fresh cilantro and serve hot with rice or flatbread.
