Begun Bharta (stuffed Eggplant Curry)
Begun Bharta is a popular Bangladeshi dish made with roasted eggplant and a flavorful blend of spices. This delicious curry is perfect for a comforting meal and is best enjoyed with steamed rice or flatbread.
Ingredients
- 2 large eggplants
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 3 green chilies, finely chopped
- 1 teaspoon ginger paste
- 1 teaspoon garlic paste
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 2 tablespoons vegetable oil
- Fresh cilantro for garnish
- Salt to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Prick the eggplants with a fork and roast them in the oven for 25-30 minutes, or until the skin is charred and the flesh is soft.
- Remove the eggplants from the oven and let them cool. Peel off the charred skin and mash the flesh in a bowl.
- Heat the vegetable oil in a pan and sauté the onions until they are translucent.
- Add the ginger and garlic paste, green chilies, and tomatoes. Cook until the tomatoes are soft.
- Add the cumin powder, coriander powder, turmeric powder, red chili powder, and salt. Mix well.
- Add the mashed eggplant to the pan and cook for 5-7 minutes, stirring occasionally.
- Garnish with fresh cilantro and serve hot with rice or flatbread.
