Ingredients

  • 4 small eggplants
  • 1 cup grated coconut
  • 1 onion, finely chopped
  • 2 green chilies, finely chopped
  • 1 teaspoon ginger paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 2 tablespoons oil
  • Salt to taste

Instructions

  1. Make a vertical slit in each eggplant, keeping the stem intact.
  2. In a bowl, mix grated coconut, chopped onion, green chilies, ginger paste, turmeric powder, cumin seeds, mustard seeds, and salt.
  3. Stuff the eggplants with the coconut mixture.
  4. Heat oil in a pan and place the stuffed eggplants in it.
  5. Cover and cook on low heat until the eggplants are tender.
  6. Serve hot with rice or roti.
