Begun Pitha (stuffed Eggplant)
Begun Pitha is a traditional dish from Tripuri Cuisine, featuring stuffed eggplant cooked to perfection.
Ingredients
- 4 small eggplants
- 1 cup grated coconut
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 1 teaspoon ginger paste
- 1 teaspoon turmeric powder
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 2 tablespoons oil
- Salt to taste
Instructions
- Make a vertical slit in each eggplant, keeping the stem intact.
- In a bowl, mix grated coconut, chopped onion, green chilies, ginger paste, turmeric powder, cumin seeds, mustard seeds, and salt.
- Stuff the eggplants with the coconut mixture.
- Heat oil in a pan and place the stuffed eggplants in it.
- Cover and cook on low heat until the eggplants are tender.
- Serve hot with rice or roti.
