Ingredients
- 2 cups cooked black-eyed peas
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt to taste

Instructions
- In a large bowl, mash the cooked black-eyed peas with a fork or potato masher.
- Add the chopped onion, minced garlic, ground cumin, paprika, and salt to the mashed peas. Mix well to combine.
- Heat vegetable oil in a deep pot or fryer to 350°F (175°C).
- Scoop spoonfuls of the bean mixture and carefully drop them into the hot oil. Fry in batches until golden brown and crispy, about 3-4 minutes per batch.
- Remove the fritters from the oil and drain on paper towels to remove excess oil.
- Serve the fried bean fritters hot with your favorite dipping sauce or chutney.
