Ingredients
- 1 lb conch, cleaned and diced
- 1 cup all-purpose flour
- 1 small onion, finely chopped
- 1 bell pepper, finely chopped
- 2 cloves garlic, minced
- 2 green onions, finely chopped
- 1 hot pepper, finely chopped
- 1 tsp baking powder
- 1/2 cup milk
- 2 eggs, beaten
- Salt and pepper to taste
- Oil for frying
Instructions
- In a large bowl, combine the diced conch, all-purpose flour, chopped onion, bell pepper, garlic, green onions, hot pepper, and baking powder.
- In a separate bowl, mix together the milk and beaten eggs. Pour this mixture into the bowl with the conch and vegetable mixture. Stir until well combined.
- Season the batter with salt and pepper to taste.
- Heat the oil in a deep skillet or pot over medium heat.
- Drop spoonfuls of the conch batter into the hot oil and fry until golden brown, about 3-4 minutes per side.
- Remove the fritters from the oil and drain on paper towels.
- Serve the beignets de lambi hot with a side of dipping sauce or a squeeze of fresh lime juice.
