Beignets De Lambi (conch Fritters)

Ingredients

  • 1 lb conch, cleaned and diced
  • 1 cup all-purpose flour
  • 1 small onion, finely chopped
  • 1 bell pepper, finely chopped
  • 2 cloves garlic, minced
  • 2 green onions, finely chopped
  • 1 hot pepper, finely chopped
  • 1 tsp baking powder
  • 1/2 cup milk
  • 2 eggs, beaten
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. In a large bowl, combine the diced conch, all-purpose flour, chopped onion, bell pepper, garlic, green onions, hot pepper, and baking powder.
  2. In a separate bowl, mix together the milk and beaten eggs. Pour this mixture into the bowl with the conch and vegetable mixture. Stir until well combined.
  3. Season the batter with salt and pepper to taste.
  4. Heat the oil in a deep skillet or pot over medium heat.
  5. Drop spoonfuls of the conch batter into the hot oil and fry until golden brown, about 3-4 minutes per side.
  6. Remove the fritters from the oil and drain on paper towels.
  7. Serve the beignets de lambi hot with a side of dipping sauce or a squeeze of fresh lime juice.
