Beijing Fried Rice (炒饭)

Ingredients

  • 3 cups cooked white rice
  • 2 eggs, beaten
  • 1 cup diced vegetables (carrots, peas, and corn)
  • 1/2 cup diced cooked meat (chicken, pork, or shrimp)
  • 3 tablespoons soy sauce
  • 2 tablespoons cooking oil
  • 1 teaspoon salt
  • 1/2 teaspoon white pepper

Instructions

  1. Heat 1 tablespoon of cooking oil in a wok or large skillet over medium-high heat.
  2. Add the beaten eggs and scramble until just set. Remove from the wok and set aside.
  3. Heat the remaining 1 tablespoon of cooking oil in the same wok. Add the diced vegetables and stir-fry for 2-3 minutes.
  4. Add the diced cooked meat to the wok and stir-fry for another 2 minutes.
  5. Add the cooked white rice to the wok, breaking up any clumps, and stir-fry for 3-4 minutes.
  6. Pour the soy sauce over the rice and mix well. Season with salt and white pepper.
  7. Add the scrambled eggs back into the wok and stir-fry for an additional 1-2 minutes.
  8. Transfer the Beijing Fried Rice to a serving dish and serve hot.
