Ingredients
- 3 cups cooked white rice
- 2 eggs, beaten
- 1 cup diced vegetables (carrots, peas, and corn)
- 1/2 cup diced cooked meat (chicken, pork, or shrimp)
- 3 tablespoons soy sauce
- 2 tablespoons cooking oil
- 1 teaspoon salt
- 1/2 teaspoon white pepper
Instructions
- Heat 1 tablespoon of cooking oil in a wok or large skillet over medium-high heat.
- Add the beaten eggs and scramble until just set. Remove from the wok and set aside.
- Heat the remaining 1 tablespoon of cooking oil in the same wok. Add the diced vegetables and stir-fry for 2-3 minutes.
- Add the diced cooked meat to the wok and stir-fry for another 2 minutes.
- Add the cooked white rice to the wok, breaking up any clumps, and stir-fry for 3-4 minutes.
- Pour the soy sauce over the rice and mix well. Season with salt and white pepper.
- Add the scrambled eggs back into the wok and stir-fry for an additional 1-2 minutes.
- Transfer the Beijing Fried Rice to a serving dish and serve hot.
