Beijing Style Spicy Beef Stir-Fry (辣子牛肉炒)

Ingredients

  • 1 lb beef, thinly sliced
  • 2 tbsp vegetable oil
  • 3-4 cloves garlic, minced
  • 1 inch ginger, julienned
  • 4-5 dried red chilies
  • 2 green onions, chopped
  • 1 tbsp soy sauce
  • 1 tbsp Shaoxing wine
  • 1 tsp sugar
  • 1/2 tsp Sichuan peppercorns

Instructions

  1. Heat the vegetable oil in a wok or large skillet over high heat.
  2. Add the beef and stir-fry for 2-3 minutes until browned. Remove the beef from the wok and set aside.
  3. In the same wok, add a little more oil if needed and stir-fry the garlic, ginger, and dried chilies until fragrant.
  4. Return the beef to the wok and add the soy sauce, Shaoxing wine, sugar, and Sichuan peppercorns. Stir-fry for another 2-3 minutes.
  5. Add the green onions and stir-fry for an additional minute.
  6. Transfer to a serving dish and serve hot with steamed rice.
