Beijing Style Spicy Chicken Feet (辣子鸡爪)

Ingredients

  • 1 kg chicken feet
  • 2 tbsp Sichuan peppercorns
  • 3-4 dried red chilies
  • 3 cloves garlic, minced
  • 2 green onions, chopped
  • 2 tbsp soy sauce
  • 1 tbsp Chinese black vinegar
  • 1 tbsp sugar
  • 1 tsp salt
  • 1/2 cup vegetable oil

Instructions

  1. Wash the chicken feet and trim the nails. Place them in a pot of boiling water for 5 minutes, then drain and set aside.
  2. In a wok, heat the vegetable oil over medium heat. Add the chicken feet and fry until golden brown, then remove and set aside.
  3. In the same wok, add the Sichuan peppercorns and dried red chilies. Stir-fry until fragrant, then add the garlic and green onions.
  4. Return the chicken feet to the wok, then add the soy sauce, Chinese black vinegar, sugar, and salt. Stir well to coat the chicken feet.
  5. Cover and simmer for 45-50 minutes, or until the chicken feet are tender and the sauce has thickened.
  6. Transfer to a serving dish and garnish with additional chopped green onions, if desired.
