Ingredients

  • 3 cups cooked jasmine rice, chilled
  • 2 tablespoons belacan (shrimp paste)
  • 2 eggs, beaten
  • 1 cup small shrimp, peeled and deveined
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 3 cloves garlic, minced
  • 2 shallots, thinly sliced
  • 3 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium heat.
  2. Add the beaten eggs and scramble until cooked. Remove from the wok and set aside.
  3. Heat the remaining 2 tablespoons of vegetable oil in the same wok. Add the minced garlic and sliced shallots, and stir-fry until fragrant.
  4. Add the belacan (shrimp paste) to the wok and stir-fry for 1-2 minutes until aromatic.
  5. Add the small shrimp to the wok and stir-fry until they turn pink and opaque.
  6. Add the mixed vegetables to the wok and stir-fry until they are heated through.
  7. Add the chilled cooked rice to the wok and stir-fry to combine all the ingredients evenly.
  8. Season the fried rice with salt and pepper to taste.
  9. Return the scrambled eggs to the wok and stir-fry to mix everything together.
  10. Once everything is heated through, remove the wok from the heat.
  11. Transfer the Belacan Fried Rice to a serving dish and serve hot.
