Belacan Fried Rice (shrimp Paste Fried Rice Surprise)

Ingredients
- 3 cups cooked jasmine rice, chilled
- 2 tablespoons belacan (shrimp paste)
- 2 eggs, beaten
- 1 cup small shrimp, peeled and deveined
- 1 cup mixed vegetables (carrots, peas, corn)
- 3 cloves garlic, minced
- 2 shallots, thinly sliced
- 3 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium heat.
- Add the beaten eggs and scramble until cooked. Remove from the wok and set aside.
- Heat the remaining 2 tablespoons of vegetable oil in the same wok. Add the minced garlic and sliced shallots, and stir-fry until fragrant.
- Add the belacan (shrimp paste) to the wok and stir-fry for 1-2 minutes until aromatic.
- Add the small shrimp to the wok and stir-fry until they turn pink and opaque.
- Add the mixed vegetables to the wok and stir-fry until they are heated through.
- Add the chilled cooked rice to the wok and stir-fry to combine all the ingredients evenly.
- Season the fried rice with salt and pepper to taste.
- Return the scrambled eggs to the wok and stir-fry to mix everything together.
- Once everything is heated through, remove the wok from the heat.
- Transfer the Belacan Fried Rice to a serving dish and serve hot.
