Ingredients

  • 500g barmbrack bread, sliced
  • 50g butter, softened
  • 500ml whole milk
  • 100g granulated sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 50g sultanas
  • 50g mixed peel
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Spread the softened butter on the barmbrack slices and arrange them in a greased baking dish.
  3. In a saucepan, heat the milk until just below boiling. Remove from heat and let it cool slightly.
  4. In a bowl, whisk together the sugar, eggs, vanilla extract, cinnamon, nutmeg, and salt. Gradually whisk in the warm milk.
  5. Pour the custard mixture over the buttered barmbrack slices, ensuring that all the bread is soaked.
  6. Sprinkle the sultanas and mixed peel over the top of the pudding.
