Ingredients
- 500g barmbrack bread, sliced
- 50g butter, softened
- 500ml whole milk
- 100g granulated sugar
- 3 eggs
- 1 tsp vanilla extract
- 50g sultanas
- 50g mixed peel
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
Instructions
- Preheat the oven to 180°C (350°F).
- Spread the softened butter on the barmbrack slices and arrange them in a greased baking dish.
- In a saucepan, heat the milk until just below boiling. Remove from heat and let it cool slightly.
- In a bowl, whisk together the sugar, eggs, vanilla extract, cinnamon, nutmeg, and salt. Gradually whisk in the warm milk.
- Pour the custard mixture over the buttered barmbrack slices, ensuring that all the bread is soaked.
- Sprinkle the sultanas and mixed peel over the top of the pudding.
- Bake in the preheated oven for 45 minutes, or until the pudding is set and golden brown on top.
