Ingredients
- 2 large potatoes, grated
- 1 onion, finely chopped
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup milk
- 2 tablespoons butter
- 1/2 cup tomato sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup cooked bacon, crumbled
- 1/4 cup sliced mushrooms
- 1/4 cup sliced red bell pepper
Instructions
- In a large bowl, combine the grated potatoes, chopped onion, flour, baking powder, salt, and black pepper. Stir in the milk until the mixture forms a thick batter.
- Heat a skillet over medium heat and melt 1 tablespoon of butter. Spoon the potato batter into the skillet, spreading it out to form a thin pancake. Cook for 5-7 minutes on each side until golden brown. Repeat with the remaining batter to make 2 potato pancakes.
- Preheat the oven to 400°F (200°C). Place the potato pancakes on a baking sheet.
- Spread the tomato sauce over the potato pancakes, then sprinkle with mozzarella cheese, cooked bacon, sliced mushrooms, and red bell pepper.
