Ingredients

  • 2 large potatoes, grated
  • 1 onion, finely chopped
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup milk
  • 2 tablespoons butter
  • 1/2 cup tomato sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup sliced mushrooms
  • 1/4 cup sliced red bell pepper

Instructions

  1. In a large bowl, combine the grated potatoes, chopped onion, flour, baking powder, salt, and black pepper. Stir in the milk until the mixture forms a thick batter.
  2. Heat a skillet over medium heat and melt 1 tablespoon of butter. Spoon the potato batter into the skillet, spreading it out to form a thin pancake. Cook for 5-7 minutes on each side until golden brown. Repeat with the remaining batter to make 2 potato pancakes.
  3. Preheat the oven to 400°F (200°C). Place the potato pancakes on a baking sheet.
  4. Spread the tomato sauce over the potato pancakes, then sprinkle with mozzarella cheese, cooked bacon, sliced mushrooms, and red bell pepper.
  5. Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
