Ingredients
- 4 lamb shanks
- 2 tablespoons olive oil
- 2 onions, chopped
- 4 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cups Belgian beer
- 2 cups beef broth
- 2 bay leaves
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Season the lamb shanks with salt and pepper.
- Heat the olive oil in a large Dutch oven over medium-high heat. Add the lamb shanks and sear on all sides until browned. Remove the lamb from the pot and set aside.
- Add the onions, garlic, carrots, and celery to the pot. Cook until the vegetables are softened, about 5 minutes.
- Pour in the Belgian beer and beef broth, and add the bay leaves and thyme. Bring the liquid to a simmer.
- Return the lamb shanks to the pot. Cover and transfer to the preheated oven. Braise for 2.5 to 3 hours, or until the meat is tender and falling off the bone.
- Remove the lamb shanks from the pot and keep warm. Skim off any excess fat from the cooking liquid. Simmer the liquid on the stovetop until it thickens to a sauce-like consistency.
- Season the sauce with salt and pepper to taste. Serve the lamb shanks with the sauce and your choice of side dishes.
