Belgrade Borscht (Beogradska Čorba)
Beogradska Čorba, also known as Belgrade Borscht, is a traditional Serbian soup that is hearty, flavorful, and perfect for cold winter days. This rich and comforting soup is a staple in Serbian cuisine and is often enjoyed with a slice of crusty bread.
Ingredients
- 1 pound beef stew meat, cubed
- 1 onion, chopped
- 2 carrots, sliced
- 2 potatoes, diced
- 1 red bell pepper, chopped
- 1 cup shredded cabbage
- 3 garlic cloves, minced
- 2 tablespoons tomato paste
- 1 teaspoon paprika
- 1 bay leaf
- Salt and pepper to taste
- 6 cups beef broth
- 2 tablespoons vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the beef stew meat and cook until browned on all sides.
- Add the chopped onion and garlic to the pot and sauté until the onion is translucent.
- Stir in the tomato paste, paprika, and bay leaf, and cook for 2 minutes.
- Pour in the beef broth and bring the soup to a boil. Reduce the heat and let it simmer for 30 minutes.
- Add the carrots, potatoes, red bell pepper, and shredded cabbage to the pot. Simmer for an additional 20 minutes, or until the vegetables are tender.
- Season the soup with salt and pepper to taste. Remove the bay leaf before serving.
