Belgrade Borscht (Beogradska Čorba)

Ingredients

  • 1 pound beef stew meat, cubed
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 red bell pepper, chopped
  • 1 cup shredded cabbage
  • 3 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon paprika
  • 1 bay leaf
  • Salt and pepper to taste
  • 6 cups beef broth
  • 2 tablespoons vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the beef stew meat and cook until browned on all sides.
  2. Add the chopped onion and garlic to the pot and sauté until the onion is translucent.
  3. Stir in the tomato paste, paprika, and bay leaf, and cook for 2 minutes.
  4. Pour in the beef broth and bring the soup to a boil. Reduce the heat and let it simmer for 30 minutes.
  5. Add the carrots, potatoes, red bell pepper, and shredded cabbage to the pot. Simmer for an additional 20 minutes, or until the vegetables are tender.
  6. Season the soup with salt and pepper to taste. Remove the bay leaf before serving.
