Belizean Boil Up

Ingredients
- 2 lbs cassava, peeled and cut into chunks
- 2 lbs sweet potatoes, peeled and cut into chunks
- 1 lb plantains, peeled and cut into chunks
- 1 lb pork, cut into chunks
- 1 lb pig tail, cut into chunks
- 1 onion, chopped
- 2 tomatoes, chopped
- 2 sprigs thyme
- 2 cloves garlic, minced
- 6 cups water
- Salt and pepper to taste
Instructions
- In a large pot, combine the cassava, sweet potatoes, and plantains.
- Add the pork, pig tail, onion, tomatoes, thyme, and garlic to the pot.
- Pour in the water and season with salt and pepper.
- Bring the pot to a boil, then reduce the heat and let it simmer for 1 hour, or until the meat is tender and the vegetables are cooked through.
- Once cooked, serve the Belizean Boil Up hot and enjoy!
