Ingredients

  • 2 lbs cassava, peeled and cut into chunks
  • 2 lbs sweet potatoes, peeled and cut into chunks
  • 1 lb plantains, peeled and cut into chunks
  • 1 lb pork, cut into chunks
  • 1 lb pig tail, cut into chunks
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 2 sprigs thyme
  • 2 cloves garlic, minced
  • 6 cups water
  • Salt and pepper to taste

Instructions

  1. In a large pot, combine the cassava, sweet potatoes, and plantains.
  2. Add the pork, pig tail, onion, tomatoes, thyme, and garlic to the pot.
  3. Pour in the water and season with salt and pepper.
  4. Bring the pot to a boil, then reduce the heat and let it simmer for 1 hour, or until the meat is tender and the vegetables are cooked through.
  5. Once cooked, serve the Belizean Boil Up hot and enjoy!
