Belizean Ceviche

Belizean Ceviche

Ingredients

  • 1 lb fresh white fish, diced
  • 1 cup lime juice
  • 1 red onion, finely chopped
  • 1 bell pepper, diced
  • 1 tomato, diced
  • 1/2 cup cilantro, chopped
  • 1 jalapeno, seeded and minced
  • Salt and pepper to taste
  • 1 avocado, diced (optional)
  • Tortilla chips, for serving

Instructions

  1. In a glass or ceramic bowl, combine the diced fish and lime juice. Make sure the fish is completely submerged in the lime juice. Cover and refrigerate for at least 2 hours, or until the fish is opaque and "cooked" by the lime juice.
  2. Once the fish is ready, drain off the excess lime juice.
  3. Add the red onion, bell pepper, tomato, cilantro, and jalapeno to the fish. Season with salt and pepper, and gently toss to combine.
  4. If using, gently fold in the diced avocado.
  5. Serve the ceviche chilled, with tortilla chips on the side.
