Belizean Ceviche
Belizean Ceviche is a popular dish in Belize, known for its fresh and vibrant flavors. This refreshing seafood dish is perfect for a hot day and makes a great appetizer or light meal.
Ingredients
- 1 lb fresh white fish, diced
- 1 cup lime juice
- 1 red onion, finely chopped
- 1 bell pepper, diced
- 1 tomato, diced
- 1/2 cup cilantro, chopped
- 1 jalapeno, seeded and minced
- Salt and pepper to taste
- 1 avocado, diced (optional)
- Tortilla chips, for serving
Instructions
- In a glass or ceramic bowl, combine the diced fish and lime juice. Make sure the fish is completely submerged in the lime juice. Cover and refrigerate for at least 2 hours, or until the fish is opaque and "cooked" by the lime juice.
- Once the fish is ready, drain off the excess lime juice.
- Add the red onion, bell pepper, tomato, cilantro, and jalapeno to the fish. Season with salt and pepper, and gently toss to combine.
- If using, gently fold in the diced avocado.
- Serve the ceviche chilled, with tortilla chips on the side.
