Belizean Chicken Escabeche

Ingredients

  • 2 lbs chicken, cut into pieces
  • 1 cup white vinegar
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 tsp allspice
  • 1 tsp black pepper
  • 1/2 tsp salt
  • 2 tbsp vegetable oil
  • 1/4 cup water
  • 2 tbsp cilantro, chopped

Instructions

  1. In a large bowl, combine the chicken, white vinegar, onion, bell pepper, garlic, allspice, black pepper, and salt. Let it marinate for 30 minutes.
  2. Heat the vegetable oil in a large pot over medium heat. Add the marinated chicken and cook until browned.
  3. Add the water to the pot, cover, and let it simmer for 30 minutes.
  4. Once the chicken is cooked through, remove from heat and stir in the chopped cilantro.
