Belizean Coconut Flan

Ingredients

  • 1 can (14 oz) coconut milk
  • 4 eggs
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a saucepan, heat the coconut milk over medium heat until it starts to simmer. Remove from heat and let it cool slightly.
  3. In a mixing bowl, whisk together the eggs, sugar, vanilla extract, and salt until well combined.
  4. Slowly pour the warm coconut milk into the egg mixture, whisking constantly.
  5. Strain the mixture through a fine-mesh sieve into a large measuring cup or bowl.
  6. Divide the mixture among 6 ramekins or custard cups.
  7. Place the ramekins in a large baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
  8. Bake for 40-45 minutes, or until the flan is set but still slightly jiggly in the center.
  9. Remove the ramekins from the water bath and let them cool to room temperature.
  10. Refrigerate the flan for at least 4 hours, or overnight, before serving.
