Ingredients
- 1 can (14 oz) coconut milk
- 4 eggs
- 1/2 cup sugar
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a saucepan, heat the coconut milk over medium heat until it starts to simmer. Remove from heat and let it cool slightly.
- In a mixing bowl, whisk together the eggs, sugar, vanilla extract, and salt until well combined.
- Slowly pour the warm coconut milk into the egg mixture, whisking constantly.
- Strain the mixture through a fine-mesh sieve into a large measuring cup or bowl.
- Divide the mixture among 6 ramekins or custard cups.
- Place the ramekins in a large baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
- Bake for 40-45 minutes, or until the flan is set but still slightly jiggly in the center.
- Remove the ramekins from the water bath and let them cool to room temperature.
- Refrigerate the flan for at least 4 hours, or overnight, before serving.
