Ingredients
- 2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 cup shredded coconut
- 1/2 cup sweetened condensed milk
- 1 teaspoon vanilla extract
- 1 egg, beaten (for egg wash)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the flour, sugar, and salt. Cut in the butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Add the shredded coconut, sweetened condensed milk, and vanilla extract to the flour mixture. Stir until a dough forms.
- Roll out the dough on a floured surface and cut into circles to fit into a muffin tin.
- Fill each pastry-lined muffin cup with the coconut filling.
- Brush the edges of the pastry with the beaten egg wash.
- Bake for 25 minutes, or until the tarts are golden brown.
- Allow the tarts to cool before serving.
