Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup shredded coconut
  • 1/2 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the flour, sugar, and salt. Cut in the butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  3. Add the shredded coconut, sweetened condensed milk, and vanilla extract to the flour mixture. Stir until a dough forms.
  4. Roll out the dough on a floured surface and cut into circles to fit into a muffin tin.
  5. Fill each pastry-lined muffin cup with the coconut filling.
  6. Brush the edges of the pastry with the beaten egg wash.
  7. Bake for 25 minutes, or until the tarts are golden brown.
  8. Allow the tarts to cool before serving.
