Belizean Escabeche Chicken

Ingredients
- 4 chicken thighs, bone-in and skin-on
- 1 cup white vinegar
- 1 onion, sliced
- 1 bell pepper, sliced
- 3 cloves garlic, minced
- 1/2 tsp allspice
- 1/2 tsp black pepper
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 2 tbsp vegetable oil
- 2 cups chicken broth
- 2 tbsp chopped cilantro, for garnish
Instructions
- In a large bowl, combine the chicken thighs and white vinegar. Let them marinate for 15 minutes.
- Heat the vegetable oil in a large pot over medium heat. Add the marinated chicken thighs and cook until browned on all sides, about 5 minutes.
- Add the sliced onion, bell pepper, and minced garlic to the pot. Cook for 3-4 minutes until the vegetables are slightly softened.
- Stir in the allspice, black pepper, dried oregano, and salt. Pour in the chicken broth and bring the mixture to a simmer.
- Cover the pot and let the chicken simmer for 30 minutes, or until it is fully cooked and tender.
- Remove the pot from the heat and let it sit for 5 minutes. Garnish with chopped cilantro before serving.
