Belizean Escabeche Chicken

Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 1 cup white vinegar
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • 3 cloves garlic, minced
  • 1/2 tsp allspice
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 2 tbsp vegetable oil
  • 2 cups chicken broth
  • 2 tbsp chopped cilantro, for garnish

Instructions

  1. In a large bowl, combine the chicken thighs and white vinegar. Let them marinate for 15 minutes.
  2. Heat the vegetable oil in a large pot over medium heat. Add the marinated chicken thighs and cook until browned on all sides, about 5 minutes.
  3. Add the sliced onion, bell pepper, and minced garlic to the pot. Cook for 3-4 minutes until the vegetables are slightly softened.
  4. Stir in the allspice, black pepper, dried oregano, and salt. Pour in the chicken broth and bring the mixture to a simmer.
  5. Cover the pot and let the chicken simmer for 30 minutes, or until it is fully cooked and tender.
  6. Remove the pot from the heat and let it sit for 5 minutes. Garnish with chopped cilantro before serving.
