Belizean Escabeche Soup

Ingredients

  • 2 lbs chicken, cut into pieces
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • 3 cloves garlic, minced
  • 2 tomatoes, chopped
  • 1/4 cup white vinegar
  • 4 cups chicken broth
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the chicken pieces and cook until browned on all sides, then remove from the pot and set aside.
  3. In the same pot, sauté the onions, bell pepper, and garlic until they are soft and fragrant.
  4. Add the tomatoes and cook for another 2-3 minutes.
  5. Pour in the white vinegar and chicken broth, then bring to a simmer.
  6. Return the chicken to the pot and let the soup simmer for 30 minutes, or until the chicken is fully cooked.
  7. Season with salt and pepper to taste.
  8. Serve hot and enjoy!
