Belizean Fish Sere

Ingredients

  • 1 lb white fish fillets, cut into chunks
  • 2 cups coconut milk
  • 2 cups water
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 tomato, diced
  • 1 hot pepper, sliced (optional)
  • 1 cup cassava, cut into chunks
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. In a large pot, combine the coconut milk and water. Bring to a simmer over medium heat.
  2. Add the onion, garlic, bell pepper, tomato, hot pepper, and cassava to the pot.
  3. Simmer for 15 minutes until the vegetables are tender.
  4. Add the fish chunks to the pot and cook for an additional 10-15 minutes until the fish is cooked through.
  5. Stir in the lime juice and season with salt and pepper to taste.
  6. Serve the fish sere hot with white rice or boiled plantains.
