Ingredients
- 1 lb white fish fillets, cut into chunks
- 2 cups coconut milk
- 2 cups water
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 1 tomato, diced
- 1 hot pepper, sliced (optional)
- 1 cup cassava, cut into chunks
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- In a large pot, combine the coconut milk and water. Bring to a simmer over medium heat.
- Add the onion, garlic, bell pepper, tomato, hot pepper, and cassava to the pot.
- Simmer for 15 minutes until the vegetables are tender.
- Add the fish chunks to the pot and cook for an additional 10-15 minutes until the fish is cooked through.
- Stir in the lime juice and season with salt and pepper to taste.
- Serve the fish sere hot with white rice or boiled plantains.
