Belizean Jerk Chicken

Ingredients

  • 4 chicken thighs
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 4 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon allspice
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon cayenne pepper
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix together the soy sauce, brown sugar, olive oil, lime juice, garlic, thyme, allspice, cinnamon, nutmeg, cayenne pepper, salt, and pepper to create the marinade.
  2. Place the chicken thighs in a resealable plastic bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken. Marinate in the refrigerator for at least 2 hours, or overnight for best results.
  3. Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the excess marinade.
  4. Grill the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is charred and cooked through.
  5. Remove the chicken from the grill and let it rest for a few minutes before serving.
