Belizean Jerk Chicken

Ingredients
- 4 chicken thighs
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 4 cloves garlic, minced
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon allspice
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon cayenne pepper
- Salt and pepper to taste
Instructions
- In a bowl, mix together the soy sauce, brown sugar, olive oil, lime juice, garlic, thyme, allspice, cinnamon, nutmeg, cayenne pepper, salt, and pepper to create the marinade.
- Place the chicken thighs in a resealable plastic bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken. Marinate in the refrigerator for at least 2 hours, or overnight for best results.
- Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the excess marinade.
- Grill the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is charred and cooked through.
- Remove the chicken from the grill and let it rest for a few minutes before serving.
