Belizean Johnny Cakes

Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp sugar
  • 1/4 cup butter, chilled and cubed
  • 3/4 cup milk

Instructions

  1. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  2. Add the chilled butter to the dry ingredients and use your fingers to rub the butter into the flour mixture until it resembles coarse crumbs.
  3. Slowly pour in the milk, stirring until the dough comes together.
  4. Turn the dough out onto a floured surface and knead gently for a few minutes.
  5. Divide the dough into 12 equal portions and shape each into a ball, then flatten into a disc about 1/2 inch thick.
  6. Heat a skillet over medium heat and add a little oil.
  7. Cook the Johnny Cakes for 3-4 minutes on each side, until golden brown and cooked through.
  8. Remove from the skillet and drain on paper towels.
