Belizean Johnny Cakes
Johnny Cakes are a popular Belizean dish, often enjoyed as a breakfast or snack. These delicious fried dumplings are easy to make and pair well with savory or sweet toppings.
Ingredients
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 2 tbsp sugar
- 1/4 cup butter, chilled and cubed
- 3/4 cup milk
Instructions
- In a large bowl, whisk together the flour, baking powder, salt, and sugar.
- Add the chilled butter to the dry ingredients and use your fingers to rub the butter into the flour mixture until it resembles coarse crumbs.
- Slowly pour in the milk, stirring until the dough comes together.
- Turn the dough out onto a floured surface and knead gently for a few minutes.
- Divide the dough into 12 equal portions and shape each into a ball, then flatten into a disc about 1/2 inch thick.
- Heat a skillet over medium heat and add a little oil.
- Cook the Johnny Cakes for 3-4 minutes on each side, until golden brown and cooked through.
- Remove from the skillet and drain on paper towels.
