Ingredients
- 1 pound shrimp, peeled and deveined
- 2 tablespoons curry powder
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 can coconut milk
- 1 tablespoon vegetable oil
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onion, garlic, and bell pepper, and cook until softened.
- Add the curry powder, turmeric, cumin, and paprika to the pot, and stir to toast the spices for 1-2 minutes.
- Pour in the coconut milk and bring the mixture to a simmer.
- Add the shrimp to the pot and cook for 5-7 minutes, or until the shrimp are pink and cooked through.
- Season with salt and pepper to taste.
- Serve the Belizean Shrimp Curry over cooked rice and garnish with fresh cilantro.
