Belizean Shrimp Curry

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons curry powder
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can coconut milk
  • 1 tablespoon vegetable oil
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onion, garlic, and bell pepper, and cook until softened.
  2. Add the curry powder, turmeric, cumin, and paprika to the pot, and stir to toast the spices for 1-2 minutes.
  3. Pour in the coconut milk and bring the mixture to a simmer.
  4. Add the shrimp to the pot and cook for 5-7 minutes, or until the shrimp are pink and cooked through.
  5. Season with salt and pepper to taste.
  6. Serve the Belizean Shrimp Curry over cooked rice and garnish with fresh cilantro.
