Belizean Stewed Lamb

Ingredients

  • 2 lbs lamb, cut into chunks
  • 2 tbsp vegetable oil

  • 3 cloves garlic, minced
  • 2 tomatoes, diced
  • 1 bell pepper, sliced
  • 2 cups beef broth
  • 1 tsp thyme
  • 1 tsp paprika

Instructions

  1. Season the lamb chunks with salt, pepper, and paprika.

  7. Simmer the stew for 1.5 to 2 hours, or until the lamb is tender.
