Ingredients
- 3 lbs oxtail, cut into pieces
- 2 tbsp vegetable oil
- 1 onion, chopped

- 2 tomatoes, diced

- 2 bay leaves
- 1 tsp allspice
- 1 tsp paprika
- 4 cups beef broth
- Salt and pepper to taste
Instructions
- Season the oxtail pieces with salt, pepper, and paprika.
- Heat vegetable oil in a large pot over medium-high heat. Brown the oxtail pieces on all sides, then remove and set aside.
- Add the chopped onion, garlic, and tomatoes to the pot. Cook until the onions are translucent.
- Return the oxtail to the pot and add thyme, bay leaves, allspice, and beef broth. Bring to a boil, then reduce heat to low and simmer for 3 hours, or until the oxtail is tender.
- Adjust seasoning with salt and pepper if needed. Serve hot.
