Belizean Tamales
Belizean tamales are a traditional dish in Belizean cuisine, made with seasoned meat and masa (corn dough) wrapped in a banana leaf and steamed to perfection.
Ingredients
- 2 cups masa harina (corn flour)
- 1 cup chicken broth
- 1 lb pork shoulder, cooked and shredded
- 1/2 cup tomato sauce
- 1/4 cup annatto (achiote) oil
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp salt
- 12 banana leaves, softened
Instructions
- In a large bowl, mix masa harina with chicken broth to form a smooth dough.
- In another bowl, combine shredded pork, tomato sauce, annatto oil, cumin, garlic powder, and salt.
- Place a softened banana leaf on a flat surface and spread a thin layer of masa dough on it.
- Add a spoonful of the pork mixture in the center of the dough.
- Fold the banana leaf to enclose the filling and secure with kitchen twine.
- Steam the tamales for 1.5 to 2 hours.
