Belizean Tamales

Belizean tamales are a traditional dish in Belizean cuisine, made with seasoned meat and masa (corn dough) wrapped in a banana leaf and steamed to perfection.

Ingredients

  • 2 cups masa harina (corn flour)
  • 1 cup chicken broth
  • 1 lb pork shoulder, cooked and shredded
  • 1/2 cup tomato sauce
  • 1/4 cup annatto (achiote) oil
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp salt
  • 12 banana leaves, softened

Instructions

  1. In a large bowl, mix masa harina with chicken broth to form a smooth dough.
  2. In another bowl, combine shredded pork, tomato sauce, annatto oil, cumin, garlic powder, and salt.
  3. Place a softened banana leaf on a flat surface and spread a thin layer of masa dough on it.
  4. Add a spoonful of the pork mixture in the center of the dough.
  5. Fold the banana leaf to enclose the filling and secure with kitchen twine.
  6. Steam the tamales for 1.5 to 2 hours.
