Benachin (coconut Rice Delight)
Benachin, also known as Coconut Rice Delight, is a popular dish in Gambian cuisine. This flavorful and aromatic rice dish is cooked with coconut milk and a variety of vegetables, making it a delicious and satisfying meal.
Ingredients
- 2 cups of rice
- 1 can of coconut milk
- 1 onion, chopped
- 2 tomatoes, diced
- 1 bell pepper, chopped
- 2 carrots, sliced
- 1 cup of green beans, chopped
- 2 cloves of garlic, minced
- 1 teaspoon of ground ginger
- 1 teaspoon of paprika
- Salt and pepper to taste
- 3 cups of vegetable broth
Instructions
- In a large pot, heat some oil over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
- Stir in the diced tomatoes, bell pepper, carrots, and green beans. Cook for a few minutes until the vegetables start to soften.
- Add the rice to the pot and stir to coat it with the vegetables.
- Pour in the coconut milk and vegetable broth. Season with paprika, salt, and pepper. Stir well to combine all the ingredients.
- Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the rice simmer for about 20-25 minutes, or until the rice is tender and the liquid is absorbed.
- Once the rice is cooked, fluff it with a fork and serve hot.
