Benachin (coconut Rice With A Twist)
Benachin, also known as Coconut Rice, is a popular dish in Gambian cuisine. This recipe puts a unique twist on the traditional dish by adding a variety of flavorful ingredients.
Ingredients
- 2 cups of rice
- 1 can of coconut milk
- 1 onion, chopped
- 2 tomatoes, diced
- 1 bell pepper, sliced
- 1 scotch bonnet pepper, chopped
- 2 cloves of garlic, minced
- 1 teaspoon of ground ginger
- 1 teaspoon of paprika
- 1 teaspoon of thyme
- Salt and pepper to taste
- 2 cups of vegetable broth
- 1 cup of mixed vegetables (carrots, peas, corn)
Instructions
- In a large pot, heat the coconut milk over medium heat.
- Add the chopped onion, diced tomatoes, sliced bell pepper, chopped scotch bonnet pepper, minced garlic, ground ginger, paprika, thyme, salt, and pepper. Cook for 5 minutes, stirring occasionally.
- Stir in the rice and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes.
- Add the mixed vegetables and continue to cook for another 10 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff the rice with a fork and serve hot.
