Benachin (coconut Rice With A Twist)

Ingredients

  • 2 cups of rice
  • 1 can of coconut milk
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 1 bell pepper, sliced
  • 1 scotch bonnet pepper, chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of ground ginger
  • 1 teaspoon of paprika
  • 1 teaspoon of thyme
  • Salt and pepper to taste
  • 2 cups of vegetable broth
  • 1 cup of mixed vegetables (carrots, peas, corn)

Instructions

  1. In a large pot, heat the coconut milk over medium heat.
  2. Add the chopped onion, diced tomatoes, sliced bell pepper, chopped scotch bonnet pepper, minced garlic, ground ginger, paprika, thyme, salt, and pepper. Cook for 5 minutes, stirring occasionally.
  3. Stir in the rice and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes.
  4. Add the mixed vegetables and continue to cook for another 10 minutes, or until the rice is tender and the liquid is absorbed.
  5. Fluff the rice with a fork and serve hot.
