Ingredients

  • 2 cups basmati rice
  • 1 can (14 oz) coconut milk
  • 2 ripe plantains, sliced
  • 1 onion, chopped
  • 3 tomatoes, diced
  • 3 cloves garlic, minced
  • 1 tsp ground ginger
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the minced garlic, ground ginger, paprika, and cayenne pepper. Stir for 1-2 minutes until fragrant.
  3. Add the diced tomatoes and cook for 5 minutes, stirring occasionally.
  4. Pour in the coconut milk and vegetable broth. Bring the mixture to a boil.
  5. Stir in the basmati rice and season with salt and pepper. Reduce the heat to low, cover the pot, and let it simmer for 15 minutes.
  6. Arrange the sliced plantains on top of the rice, cover, and continue to cook for an additional 10-15 minutes until the rice is tender and the plantains are soft.
  7. Fluff the rice with a fork, gently incorporating the plantains. Adjust seasoning if needed.
  8. Serve the Benachin hot and enjoy!
