Benachin (coconut Rice With Plantains)
Benachin, also known as Coconut Rice with Plantains, is a popular dish in Gambian cuisine. This flavorful and aromatic one-pot meal is perfect for a hearty and satisfying dinner.
Ingredients
- 2 cups basmati rice
- 1 can (14 oz) coconut milk
- 2 ripe plantains, sliced
- 1 onion, chopped
- 3 tomatoes, diced
- 3 cloves garlic, minced
- 1 tsp ground ginger
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 4 cups vegetable broth
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic, ground ginger, paprika, and cayenne pepper. Stir for 1-2 minutes until fragrant.
- Add the diced tomatoes and cook for 5 minutes, stirring occasionally.
- Pour in the coconut milk and vegetable broth. Bring the mixture to a boil.
- Stir in the basmati rice and season with salt and pepper. Reduce the heat to low, cover the pot, and let it simmer for 15 minutes.
- Arrange the sliced plantains on top of the rice, cover, and continue to cook for an additional 10-15 minutes until the rice is tender and the plantains are soft.
- Fluff the rice with a fork, gently incorporating the plantains. Adjust seasoning if needed.
- Serve the Benachin hot and enjoy!
