Benachin (exotic Gambian Jollof)
Benachin, also known as Gambian Jollof, is a flavorful and exotic one-pot rice dish that is popular in Gambian cuisine. This dish is a staple in many Gambian households and is often served during special occasions and gatherings.
Ingredients
- 2 cups of long-grain rice
- 1 pound of chicken, cut into pieces
- 1 large onion, finely chopped
- 2 tomatoes, diced
- 1 bell pepper, diced
- 3 cloves of garlic, minced
- 1 teaspoon of ground ginger
- 1 teaspoon of paprika
- 1 teaspoon of cayenne pepper
- 4 cups of chicken broth
- 1/4 cup of tomato paste
- Salt and pepper to taste
- 1/4 cup of vegetable oil
Instructions
- Season the chicken pieces with salt, pepper, and half of the minced garlic.
- Heat the vegetable oil in a large pot over medium heat. Add the seasoned chicken and cook until browned. Remove the chicken from the pot and set aside.
- In the same pot, sauté the onions, remaining garlic, tomatoes, and bell pepper until softened.
- Stir in the ground ginger, paprika, and cayenne pepper, then add the tomato paste and cook for 2 minutes.
- Add the rice to the pot and stir to coat it with the vegetable and spice mixture.
- Return the browned chicken pieces to the pot and pour in the chicken broth. Season with salt and pepper, then bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for 25-30 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff the rice with a fork, then serve the Benachin hot.
