Benachin (exotic Vegetable Jollof)

Ingredients

  • 2 cups of jasmine rice
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 cup of diced carrots
  • 1 cup of diced eggplant
  • 1 cup of diced zucchini
  • 1 cup of diced tomatoes
  • 1 teaspoon of paprika
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander
  • 4 cups of vegetable broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat and sauté the onions and garlic until softened.
  2. Add the bell pepper, carrots, eggplant, and zucchini, and cook for 5 minutes.
  3. Stir in the diced tomatoes, paprika, cumin, and coriander, and cook for another 2 minutes.
  4. Add the rice and vegetable broth, then season with salt and pepper. Bring to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
  5. Fluff the rice with a fork, adjust the seasoning if needed, and serve hot.
