Ingredients
- 2 cups of jasmine rice
- 1 large onion, chopped
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 cup of diced carrots
- 1 cup of diced eggplant
- 1 cup of diced zucchini
- 1 cup of diced tomatoes
- 1 teaspoon of paprika
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander
- 4 cups of vegetable broth
- Salt and pepper to taste
Instructions
- In a large pot, heat some oil over medium heat and sauté the onions and garlic until softened.
- Add the bell pepper, carrots, eggplant, and zucchini, and cook for 5 minutes.
- Stir in the diced tomatoes, paprika, cumin, and coriander, and cook for another 2 minutes.
- Add the rice and vegetable broth, then season with salt and pepper. Bring to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
- Fluff the rice with a fork, adjust the seasoning if needed, and serve hot.
