Benachin (jollof Rice Fusion)
Benachin, also known as Jollof Rice Fusion, is a popular dish in Gambian cuisine that combines the flavors of Jollof rice with local ingredients. This vibrant and flavorful one-pot dish is perfect for gatherings and celebrations.
Ingredients
- 2 cups long-grain rice
- 1 pound chicken, cut into pieces
- 1 onion, finely chopped
- 3 tomatoes, diced
- 1 bell pepper, chopped
- 1 hot pepper, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon ground ginger
- 1 teaspoon paprika
- 1 teaspoon thyme
- 1/2 cup tomato paste
- 3 cups chicken broth
- 1/4 cup vegetable oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the chicken pieces and cook until browned on all sides. Remove the chicken from the pot and set aside.
- In the same pot, add the onions, garlic, and hot pepper. Sauté until the onions are translucent.
- Add the tomatoes, bell pepper, ginger, paprika, and thyme. Cook for 5 minutes, stirring occasionally.
- Stir in the tomato paste and cook for another 3 minutes.
- Add the rice and chicken pieces to the pot. Pour in the chicken broth and season with salt and pepper.
- Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 25-30 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff the rice with a fork and serve hot.
