Benachin (jollof Rice Fusion)

Ingredients

  • 2 cups long-grain rice
  • 1 pound chicken, cut into pieces
  • 1 onion, finely chopped
  • 3 tomatoes, diced
  • 1 bell pepper, chopped
  • 1 hot pepper, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon paprika
  • 1 teaspoon thyme
  • 1/2 cup tomato paste
  • 3 cups chicken broth
  • 1/4 cup vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the chicken pieces and cook until browned on all sides. Remove the chicken from the pot and set aside.
  3. In the same pot, add the onions, garlic, and hot pepper. Sauté until the onions are translucent.
  4. Add the tomatoes, bell pepper, ginger, paprika, and thyme. Cook for 5 minutes, stirring occasionally.
  5. Stir in the tomato paste and cook for another 3 minutes.
  6. Add the rice and chicken pieces to the pot. Pour in the chicken broth and season with salt and pepper.
  7. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 25-30 minutes, or until the rice is tender and the liquid is absorbed.
  8. Fluff the rice with a fork and serve hot.
