Bendi Curry (sri Lankan Okra Curry)

Ingredients

  • 1 pound okra, trimmed and cut into 1-inch pieces
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 1 can (14 oz) coconut milk
  • 2 tablespoons vegetable oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon chili powder
  • Salt to taste
  • 2 tablespoons chopped cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pan over medium heat. Add the mustard seeds and cumin seeds. When the seeds start to splutter, add the chopped onion and sauté until it turns golden brown.
  2. Add the chopped tomatoes, turmeric powder, chili powder, and salt. Cook until the tomatoes are soft and the oil starts to separate from the mixture.
  3. Add the okra pieces and stir well to coat them with the spice mixture. Cook for 5 minutes, stirring occasionally.
  4. Pour in the coconut milk and bring the curry to a gentle simmer. Cover the pan and cook for another 10-15 minutes, or until the okra is tender and the flavors are well combined.
  5. Garnish with chopped cilantro and serve hot with rice or roti.
