Bendi Curry (sri Lankan Okra Curry)
Bendi Curry, also known as Sri Lankan Okra Curry, is a flavorful and aromatic dish that is a staple in Sri Lankan cuisine. This vegetarian curry is made with tender okra cooked in a rich and spicy coconut milk gravy, perfect to be enjoyed with rice or roti.
Ingredients
- 1 pound okra, trimmed and cut into 1-inch pieces
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 1 can (14 oz) coconut milk
- 2 tablespoons vegetable oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon chili powder
- Salt to taste
- 2 tablespoons chopped cilantro for garnish
Instructions
- Heat the vegetable oil in a large pan over medium heat. Add the mustard seeds and cumin seeds. When the seeds start to splutter, add the chopped onion and sauté until it turns golden brown.
- Add the chopped tomatoes, turmeric powder, chili powder, and salt. Cook until the tomatoes are soft and the oil starts to separate from the mixture.
- Add the okra pieces and stir well to coat them with the spice mixture. Cook for 5 minutes, stirring occasionally.
- Pour in the coconut milk and bring the curry to a gentle simmer. Cover the pan and cook for another 10-15 minutes, or until the okra is tender and the flavors are well combined.
- Garnish with chopped cilantro and serve hot with rice or roti.
