Benechin (gambian Style Lamb Curry)
Benechin is a traditional Gambian dish that features tender lamb cooked in a rich and flavorful curry sauce. This recipe offers a taste of authentic Gambian cuisine with its aromatic spices and hearty ingredients.
Ingredients
- 2 lbs lamb, cut into chunks
- 2 onions, finely chopped
- 4 garlic cloves, minced
- 1-inch piece of ginger, grated
- 2 tomatoes, chopped
- 2 tbsp tomato paste
- 2 tbsp vegetable oil
- 2 tsp curry powder
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- 4 cups water
- 2 cups basmati rice, for serving
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onions, garlic, and ginger, and sauté until the onions are soft and translucent.
- Add the lamb chunks to the pot and brown on all sides, about 5 minutes.
- Stir in the curry powder, cumin, coriander, cayenne pepper, and tomato paste, coating the lamb evenly with the spices.
- Add the chopped tomatoes and season with salt and pepper. Pour in the water, cover the pot, and let the benechin simmer for 1.5 hours, stirring occasionally.
- While the benechin is simmering, rinse the basmati rice and cook according to package instructions.
- Serve the benechin over the cooked basmati rice and enjoy!
