Benechin (gambian Style Lamb Curry)

Ingredients

  • 2 lbs lamb, cut into chunks
  • 2 onions, finely chopped
  • 4 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2 tomatoes, chopped
  • 2 tbsp tomato paste
  • 2 tbsp vegetable oil
  • 2 tsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • 4 cups water
  • 2 cups basmati rice, for serving

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onions, garlic, and ginger, and sauté until the onions are soft and translucent.
  2. Add the lamb chunks to the pot and brown on all sides, about 5 minutes.
  3. Stir in the curry powder, cumin, coriander, cayenne pepper, and tomato paste, coating the lamb evenly with the spices.
  4. Add the chopped tomatoes and season with salt and pepper. Pour in the water, cover the pot, and let the benechin simmer for 1.5 hours, stirring occasionally.
  5. While the benechin is simmering, rinse the basmati rice and cook according to package instructions.
  6. Serve the benechin over the cooked basmati rice and enjoy!
