Ingredients

  • 2 cups of rice
  • 1 pound of smoked fish
  • 2 onions, chopped
  • 4 tomatoes, diced
  • 2 carrots, sliced
  • 1 bell pepper, chopped
  • 1 hot pepper, chopped
  • 1 cup of water
  • Salt and pepper to taste

Instructions

  1. Wash the rice and set aside.
  2. Prepare the smoked fish by removing the bones and breaking it into smaller pieces.
  3. In a large pot, layer the ingredients starting with the rice, followed by the smoked fish, onions, tomatoes, carrots, bell pepper, and hot pepper.
  4. Add the water and season with salt and pepper.
  5. Cover the pot and cook over medium heat for about 1 hour, or until the rice is tender and the flavors have melded together.
  6. Stir gently to combine all the ingredients before serving.
