Ingredients
- 2 cups of rice
- 1 pound of smoked fish
- 2 onions, chopped
- 4 tomatoes, diced
- 2 carrots, sliced
- 1 bell pepper, chopped
- 1 hot pepper, chopped
- 1 cup of water
- Salt and pepper to taste
Instructions
- Wash the rice and set aside.
- Prepare the smoked fish by removing the bones and breaking it into smaller pieces.
- In a large pot, layer the ingredients starting with the rice, followed by the smoked fish, onions, tomatoes, carrots, bell pepper, and hot pepper.
- Add the water and season with salt and pepper.
- Cover the pot and cook over medium heat for about 1 hour, or until the rice is tender and the flavors have melded together.
- Stir gently to combine all the ingredients before serving.
