Ingredients
- 2 lbs beef, cut into cubes
- 1 cup tamarind pulp
- 2 onions, chopped
- 3 tomatoes, diced
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 2-3 hot peppers, chopped
- 1/4 cup vegetable oil
- 4 cups water
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the onions, garlic, ginger, and hot peppers. Sauté until the onions are soft and translucent.
- Add the beef cubes and brown on all sides.
- Stir in the tamarind pulp and water. Bring to a boil, then reduce the heat and simmer for 1 hour, or until the beef is tender.
- Add the diced tomatoes and season with salt and pepper. Simmer for an additional 10 minutes.
- Serve the Benechin hot with rice or couscous.
