Ingredients
- 1 cup dried lentils
- 2 large sweet potatoes, peeled and diced
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tablespoon grated fresh ginger
- 1 can (14 oz) coconut milk
- 2 cups vegetable broth
- 2 tablespoons Berber spice blend
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté for 3-4 minutes until the onion is translucent.
