Berber-spiced Pumpkin Soup

Ingredients

  • 1 small pumpkin, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/4 tsp cayenne pepper
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until softened.
  3. Stir in the ground cumin, coriander, cinnamon, and cayenne pepper, and cook for 1-2 minutes until fragrant.
  4. Add the diced pumpkin and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the pumpkin is tender.
  5. Use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer the soup to a blender and blend in batches.
  6. Season with salt and pepper to taste.
  7. Serve the Berber-spiced Pumpkin Soup hot, garnished with a sprinkle of ground cumin or a dollop of coconut cream if desired.
