Ingredients
- 1 small pumpkin, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1/4 tsp cayenne pepper
- 4 cups vegetable broth
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until softened.
- Stir in the ground cumin, coriander, cinnamon, and cayenne pepper, and cook for 1-2 minutes until fragrant.
- Add the diced pumpkin and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the pumpkin is tender.
- Use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer the soup to a blender and blend in batches.
- Season with salt and pepper to taste.
- Serve the Berber-spiced Pumpkin Soup hot, garnished with a sprinkle of ground cumin or a dollop of coconut cream if desired.
