Berber Vegetable Tagine

Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 carrots, sliced
- 2 zucchinis, sliced
- 1 red bell pepper, sliced
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 1 cup vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1/2 teaspoon ground cinnamon
- Salt and pepper to taste
- 1/4 cup chopped fresh cilantro, for garnish
Instructions
- Heat the olive oil in a tagine or large pot over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
- Add the sliced carrots, zucchinis, and red bell pepper to the pot, and cook for 5 minutes.
- Stir in the chickpeas, diced tomatoes, vegetable broth, cumin, coriander, paprika, cinnamon, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 45 minutes, or until the vegetables are tender.
- Adjust the seasoning if needed, then garnish with chopped cilantro before serving.
