Berber Vegetable Tagine

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 carrots, sliced
  • 2 zucchinis, sliced
  • 1 red bell pepper, sliced
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 cup vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro, for garnish

Instructions

  1. Heat the olive oil in a tagine or large pot over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
  3. Add the sliced carrots, zucchinis, and red bell pepper to the pot, and cook for 5 minutes.
  4. Stir in the chickpeas, diced tomatoes, vegetable broth, cumin, coriander, paprika, cinnamon, salt, and pepper.
  5. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 45 minutes, or until the vegetables are tender.
  6. Adjust the seasoning if needed, then garnish with chopped cilantro before serving.
