Ingredients

  • 2 large eggplants
  • 1 lb ground beef
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 tomato, chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1 tsp paprika
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 2 cups tomato sauce
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the eggplants in half lengthwise and scoop out the flesh, leaving about a 1/2-inch shell. Chop the eggplant flesh and set aside.
  3. In a skillet, brown the ground beef over medium heat. Add the onion, garlic, bell pepper, and chopped eggplant. Cook until the vegetables are tender.
  4. Stir in the tomato, breadcrumbs, Parmesan cheese, parsley, paprika, cumin, salt, and pepper. Cook for another 5 minutes.
  5. Fill the eggplant shells with the meat mixture and place them in a baking dish. Pour the tomato sauce over the stuffed eggplants and sprinkle with mozzarella cheese.
  6. Bake for 30-35 minutes, or until the eggplants are tender and the cheese is golden and bubbly.
