Ingredients
- 2 large eggplants
- 1 lb ground beef
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 1 tomato, chopped
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped parsley
- 1 tsp paprika
- 1/2 tsp cumin
- Salt and pepper to taste
- 2 cups tomato sauce
- 1/2 cup shredded mozzarella cheese
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the eggplants in half lengthwise and scoop out the flesh, leaving about a 1/2-inch shell. Chop the eggplant flesh and set aside.
- In a skillet, brown the ground beef over medium heat. Add the onion, garlic, bell pepper, and chopped eggplant. Cook until the vegetables are tender.
- Stir in the tomato, breadcrumbs, Parmesan cheese, parsley, paprika, cumin, salt, and pepper. Cook for another 5 minutes.
- Fill the eggplant shells with the meat mixture and place them in a baking dish. Pour the tomato sauce over the stuffed eggplants and sprinkle with mozzarella cheese.
- Bake for 30-35 minutes, or until the eggplants are tender and the cheese is golden and bubbly.
- Serve the Berenjenas Rellenas a la Asturiana hot, garnished with additional parsley if desired.
