Ingredients
- 1 lb white fish fillets, such as cod or haddock
- 1 onion, chopped
- 2 carrots, sliced
- 2 potatoes, diced
- 2 cups fish or vegetable broth
- 1 cup heavy cream
- 2 tbsp butter
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat.
- Add the chopped onion and cook until softened.
- Add the carrots and potatoes, and cook for a few minutes.
- Pour in the fish or vegetable broth and bring to a simmer.
- Gently add the fish fillets to the pot and let them cook for about 10 minutes, or until they are flaky.
- Pour in the heavy cream and let the stew simmer for another 5 minutes.
- Season with salt and pepper to taste.
