Bergen-style Fish Stew

Ingredients

  • 1 lb white fish fillets, such as cod or haddock
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 2 cups fish or vegetable broth
  • 1 cup heavy cream
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onion and cook until softened.
  3. Add the carrots and potatoes, and cook for a few minutes.
  4. Pour in the fish or vegetable broth and bring to a simmer.
  5. Gently add the fish fillets to the pot and let them cook for about 10 minutes, or until they are flaky.
  6. Pour in the heavy cream and let the stew simmer for another 5 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot and enjoy!
