Berliner Pfannkuchen (berliner Donuts)

Ingredients
- 3 1/4 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/4 oz active dry yeast
- 1 cup milk
- 2 large eggs
- 1/4 cup unsalted butter
- 1/2 tsp salt
- 1 tsp vanilla extract
- Vegetable oil, for frying
- 1 cup fruit jam or custard, for filling
- Powdered sugar, for dusting
Instructions
- In a large bowl, combine the flour and sugar. In a separate bowl, dissolve the yeast in warm milk and let it sit for 5 minutes.
- Add the yeast mixture, eggs, melted butter, salt, and vanilla extract to the dry ingredients. Mix until a dough forms.
- Cover the bowl with a kitchen towel and let the dough rise in a warm place for 1 hour.
- On a floured surface, roll out the dough to 1/4 inch thickness. Use a round cutter to cut out circles of dough.
- Place a small spoonful of fruit jam or custard in the center of half of the dough circles. Brush the edges with water and place another circle of dough on top, pressing the edges to seal.
- Heat the vegetable oil in a large pot to 350°F (175°C). Fry the filled donuts for 2-3 minutes on each side until golden brown. Drain on paper towels.
- Dust the donuts with powdered sugar before serving.
